Deep Fried "PHO" With Mushroom Sauce (VEGAN)

Vegetarian Fried “Pho” noodles (Pho Ap Chao Chay) is a delicious vegan pho dish that involves a crispy bed of rice pho noodles and vegetables topped off with a rich and flavorful mushroom sauce. Enjoy this dish with SIMPLY FOOD Premium “PHO” Noodles!

Ingredients

Cook Time: 45 minutes


Mushroom Sauce

2 Oz of Fresh Shiitake Mushroom

2 Oz of Oyster Mushroom

1 Oz of Broccoli

1 Oz Vegan Beef Slices

1 Oz of Carrot

1 Oz of Daikon

0.3 OZ of Green Onion

350ml of Water

0.3 OZ of Cinnamon

0.2 OZ of Star Anise

2 Tbsp of Vegetable Bouillon Powder

1 Tbsp of Sugar

2 Tbsp of Soy Sauce

1 Tsp of Salt

0.2 Oz of Cornstarch


Vegan “Pho” Noodles 

5 Oz of SIMPLY FOOD Premium "Pho" Noodles

2 Tbsp of Cooking Oil

5 Oz of Premium Dried Grain Starch Noodles

1 Oz of Carrot

1 Oz of Daikon

1 Oz  of Fresh Shiitake Mushroom

1 Oz of Oyster Mushroom

0.2 Oz of Green Onion

0.3 Oz of Preserved Radish (Salted)

1 Oz of Vegetable Bouillon Powder

1 Tbsp of Sugar

Instructions

Mushroom Sauce


Step 1

Soak vegan beef slices in water for 20 minutes until softened. 

Step 2

In a hot pan, stir-fry sliced green onions with cooking oil until fragrant.

Step 3

In a separate pan, char the cinnamon and star anise until fragrant. Then pour in water and add carrot, daikon, vegan beef slices, and the stir-fried green onions. Stir and let it cook for 30 minutes.

Step 4

Add vegetable bouillon powder, sugar, salt, shitake mushrooms, oyster mushrooms and broccoli. Let cook for 10 minutes.

Step 5

Discard the cinnamon, star anise, daikon and carrot. In a separate bowl, dissolve cornstarch with water.

Step 6

Slowly stir the cornstarch slurry into the mixture until the sauce thickens.


Vegan Pho Noodles


Step 1

Heat cooking oil in a pan over high heat.

Step 2

Once the cooking oil is hot, add the dried vegan "Pho" noodles and quickly deep-fry until crispy. Place the fried vegan "Pho" noodles on a plate and pour the mushroom sauce over to serve. Enjoy this vegan pho noodle dish!
