Vegan Rice Paper Rolls

Try this vegetarian rendition of “Bi Cuon”! Saute, a mixture of vegetables with rice powder to mimic the great taste of shredded pork skin, and pair with fresh herbs to make a refreshing rice paper roll.  In this simple recipe, try SIMPLY FOOD Premium Fresh Rice Vermicelli and SIMPLY FOOD Premium Spring Roll Rice Paper!

Vegan Rice Paper Roll

12 pieces of SIMPLY FOOD Rice Paper

200g of SIMPLY FOOD Premium Fresh Rice Vermicelli

2 Oz of Rice

10 Oz of Fried Tofu

5 Oz of Sweet Potato

5 Oz of Carrot

10 Oz of Jicama

0.3 Oz of Green Onion

1 Tsp of Soy Sauce

1/2 Tsp of Bouillon Powder

1/2 Tsp of Sugar

Suitable amount of Cooking Oil

Suitable amount of Salad

Suitable amount of Mint

Dipping Sauce 

2 Tbsp of Soy Sauce

1 Tbsp of Sugar

1/2 Tsp of Salt

100ml of Water

2 Tbsp of Lime Juice


Vegetable Mixture

Step 1

Cook the rice in a heated pan over medium heat until rice is lightly golden.  Grind toasted rice until it has a powder consistency.

Step 2

Thinly julienne carrot and sweet potato. Thinly julienne jicama and mix it with salt.  Let it rest for 15 minutes then discard excess water. 

Step 3

Deep fry the thinly sliced sweet potato until a golden crisp.  Then, deep fry the tofu and thinly julienne.

Step 4

In a heated pan, stir-fry minced green onions in cooking oil until fragrant.  Continue adding in jicama, carrots, soy sauce, bouillon powder, and sugar.  Stir-fry until vegetables are cooked.  Set aside and let it cool.

Step 5

Toss in fried sweet potato into the mixture and mix well. Lastly, add the fried tofu and roasted rice powder and mix well. Set aside.

Rice Vermicelli Noodles

Step 1

Soak Simply Food Rice Vermicelli in cold water for 5 minutes to soften, then cook it in boiling water for 5 minutes.

Step 2

Rinse rice vermicelli noodles briefly under cold water and drain.

To prepare, dampen a Simply Food Rice Paper on both sides to soften. Place the desired amount of vegetable mixture for each roll in the center of rice paper, along with salad, rice vermicelli noodles, and mint to your liking. Fold over the rice paper to roll and wrap tightly. Enjoy rice paper rolls with sweet-and-sour dipping sauce.
